旨味の強いわたり蟹を丁寧にほぐし、香りよく包んでカリッと揚げました。外は軽やかに香ばしく、中はしっとりとした蟹の甘みが広がる一品です。ソースのアクセントとともにコースの始まりを彩ります。


A delicate parcel of blue swimmer crab, carefully wrapped and fried until crisp and golden.

Light and crunchy on the outside, with sweet and tender crab inside, this dish is served with a touch of sauce to highlight the natural seafood flavor and open the omakase course with elegance.
